The Monochrome Picture Style setting puts black & white capability at your fingertips for RAW or JPEG images. Not just a "desaturation" setting, the Monochrome setting allows extensive control over the contrast and sharpness. It also allows you to mimic the effects of traditional yellow, orange, red, or green filters used with B&W photographic film. And on top of that, a variety of in-camera toning options, including sepia, are possible.
